A pancake-eating contest at Sacred Heart University in Connecticut took a tragic turn for 20-year-old Caitlin Nelson, a social work student. The event, organized by a sorority to raise funds for Prevent Child Abuse America, ended in disaster when Caitlin collapsed after consuming several pancakes and later passed away at Columbia Medical Center in New York. Despite having known food allergies, the coroner determined that choking was the cause of her death.
A wrongful death lawsuit filed by Caitlin’s mother revealed concerns about the dangers of quickly eating thick pancakes, which the university had approved for the event. This heartbreaking incident added to the Nelson family’s previous tragedy, with Caitlin’s father, James, losing his life during the 9/11 attacks while assisting people in the World Trade Center collapse.
Caitlin, described as a “beautiful human being” by a friend, dedicated her time to volunteering and mentoring children affected by the Sandy Hook school shootings. She was admired for her heroic actions and loving spirit.
Following Caitlin’s passing, a vigil on campus drew thousands to honor her memory. In 2020, Caitlin’s mother dropped the lawsuit against the university after reaching a settlement. Both parties have refrained from further comments on the matter.
